Understanding Round Steak
Round steak comes from the cow’s rear leg. It’s divided into cuts like the eye round and bottom round. You can buy it as a whole roast or sliced steaks at stores like Aldi.
Also known as rump roast, it’s very lean. This makes it tough, so it needs slow cooking. The recipe is for 1-inch thick slices. Adjust cooking time for different thicknesses.

The Secret to Perfect Gravy
This recipe uses McCormick Onion Gravy. Don’t use onion soup mix instead. If you can’t find McCormick, use another brown or mushroom gravy mix.
Want to thicken your gravy? Mix 1 teaspoon of cornstarch with ¼ cup of cold water. Stir it into the gravy and cook until it thickens. Or, drain the gravy, add the slurry, and simmer until it thickens.

Classic Round Steak & Gravy Recipe
Prep Time: 15 minutes
Cook Time: 20 minutes (Instant Pot), 8 hours (slow cooker), 2-2.5 hours (oven)

Ingredients
- 4-6 slices Round Steak (approximately 2 lbs)
- 2 pouches Onion Gravy
- 2 cups Hot Water
- 1 Medium Yellow Onion, sliced
- 2 cups Diced Mushrooms
- 3 cloves Garlic, peeled and smashed
- 2 tablespoons Butter
Instructions
Instant Pot Method
- Sear both sides of the round steak in 1 tablespoon of butter in a skillet for 2-3 minutes per side.
- In your Instant Pot, sauté the onions, garlic, and mushrooms in the remaining tablespoon of butter until the mushrooms are golden brown and tender.
- Add the seared steak slices to the pot.
- Dissolve the gravy packets in 2 cups of hot water.
- Pour the gravy mixture over the steak and onions.
- Set your Instant Pot to the “meat” setting and cook on high pressure for 20 minutes.
- Release the pressure and serve.
Slow Cooker Method
Follow the Instant Pot instructions but cook on low for 8 hours.
Oven Method
Follow the Instant Pot instructions but transfer everything to a covered roaster. Bake at 350 degrees for 2-2.5 hours or until the meat is fork-tender.
